Raspberry Cream Cookies

Ingredients

  • ½ cup butter, softened
  • ½ cup cream cheese, softened
  • 1 cup sugar
  • 1 egg
  • 1 tsp vanilla
  • 2 cups flour
  • 1 tsp baking powder
  • ½ cup raspberry jam

Directions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the butter, cream cheese, and sugar until light and fluffy.
  3. Beat in the egg and vanilla until fully combined.
  4. In a separate bowl, whisk together the flour and baking powder.
  5. Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms.
  6. Roll the dough into 1-inch balls and place them on the prepared baking sheet.
  7. Using your thumb or the back of a spoon, create a small indentation in each cookie.
  8. Fill each indentation with a small spoonful of raspberry jam.
  9. Bake for 10–12 minutes, or until the edges are just lightly golden.
  10. Opitional sprinkle with sugar.
  11. Cool on a wire rack and enjoy the creamy, fruity goodness.
