Lemon Chicken & Quinoa Bowls
Fresh, colorful, and finished with a creamy lemon-yogurt dressing.

Serves: 4
Prep time: 20 minutes
Cook time: 20 minutes
Estimated protein: Approximately 50 grams per serving
Ingredients
For the bowls:
- 1 cup dry quinoa, rinsed
- 2 cups water
- 1½ pounds boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- ½ teaspoon garlic powder
- ½ teaspoon fine salt
- ¼ teaspoon black pepper
- 1 English cucumber, chopped
- 2 cups cherry tomatoes, halved
- ½ cup crumbled feta cheese
- ¼ cup chopped fresh parsley
For the dressing:
- ¾ cup plain nonfat Greek yogurt
- 2 tablespoons lemon juice
- 1 small garlic clove, finely grated
- ½ teaspoon dried dill
- 2–4 tablespoons water, to thin
- Salt and black pepper, to taste
Directions
- Combine the quinoa and water in a saucepan. Bring to a boil, cover, and reduce the heat to low. Simmer for about 15 minutes, or until the water is absorbed. Remove from the heat and let stand, covered, for 5 minutes. Fluff with a fork.
- Pound the chicken breasts to an even thickness of about ½–¾ inch. Coat with the olive oil, lemon juice, oregano, garlic powder, salt, and pepper.
- Heat a large skillet over medium heat. Cook the chicken for approximately 5–7 minutes per side, adjusting the heat as needed, until a thermometer inserted into the thickest part reaches 165°F.
- Transfer the chicken to a clean cutting board. Rest for 5 minutes, then slice.
- Whisk together the dressing ingredients, adding water until the dressing is easy to drizzle.
- Divide the quinoa, chicken, cucumber, and tomatoes among four bowls. Top with feta, parsley, and dressing.
Make it work for your family: Set out the ingredients separately and let everyone build a bowl with their favorite toppings.

- Finish with cilantro, if using, and serve with lime wedges.
Make it work for your family: Enjoy it straight from the bowl, spoon it over brown rice, or tuck it into warm whole-wheat tortillas. Additional sides will change the nutrition per serving.
